Sometimes the simplest recipes are the best; this fast and easy chicken dinner proves it. The recipe calls for just five basic ingredients—chicken, cayenne pepper, avocado, red onion, and lime juice— and it can be on the table in 30 minutes. We use chicken cutlets because they’re ready in a flash and tend to cook more evenly than thicker breasts. A simple cayenne coating adds heat and depth while a cool, creamy avocado salsa brings a palate-pleasing contrast and more protein. Serve it with rice, roasted sweet potatoes, or crunchy greens for a speedy, no-fuss meal.



Turning Chicken Breasts Into Cutlets

Chicken cutlets are one of our favorite weeknight proteins. They cook up in minutes, and since they’re an even thickness from one edge to the other, they tend to stay more moist and juicy than larger, thicker chicken breasts.


You can buy chicken cutlets at the market, but it’s more affordable (and so easy) to get the job done at home. To end up with the eight cutlets you’ll need for this recipe, start with four boneless, skinless chicken breast halves.


  1. Place a chicken breast on a cutting board and set your non-dominant hand on top, applying gentle pressure. Using a sharp chef’s knife, cut the breast in half horizontally. Repeat with remaining pieces.

  2. Working with one half at a time, cover chicken with a piece of plastic wrap, then use a meat mallet or rolling pin to gently pound the meat into an even thickness (about 1/4 inch thick). When pounding, start from the center and work your way out to the edges.



How to Know if Cayenne Pepper Is Still Fresh

Like other spices, cayenne doesn’t really expire, but it does lose its potency after some time, becoming a dull, muted version of its former self. Luckily, there are a few easy ways to determine whether it’s fresh enough to keep using.


Inspect the color: Fresh cayenne pepper is a bright, vivid red. Over time, it will begin to dull and become more brown than red.


Give it a sniff: It should smell sharp and pungent, especially when rubbed between your fingers. Cayenne that’s muted or, worse, smells like nothing at all, is past its prime.


Taste it: Cayenne pepper has a fiery heat and a subtle earthiness. Taste a small amount; if it’s sharp and spicy, it’s still worth using, but if it’s bland and dusty, it’s time to let it go.

  • Coarse salt and ground pepper

  • ¼ teaspoon cayenne pepper

  • 8 thin chicken cutlets (about 1 ½ pounds total)

  • 2 tablespoons olive oil

  • 1 medium red onion, finely diced

  • 2 tablespoons fresh lime juice

  • 1 Hass avocado, pitted and cut into chunks



Directions

  1. Make spice rub; coat chicken:

    In a small bowl, combine 1 teaspoon salt, 1/4 teaspoon pepper, and cayenne; rub all over chicken.


  1. Cook cutlets:

    In a large skillet, heat oil over medium. Add chicken, and cook until browned on the outside and opaque throughout, 8 to 10 minutes per side.


  1. Make avocado salsa; serve with chicken:

    Meanwhile, in a medium bowl, combine onion and lime juice; set aside. Just before serving, fold avocado chunks into onion mixture; season with salt and pepper. Serve chicken topped with salsa.



How to Store and Reheat Leftovers

Store chicken and salsa in separate airtight containers. The chicken will keep for up to four days, while salsa should be eaten within two days. Reheat chicken in an air-fryer at 400 degrees Fahrenheit for 4 to 6 minutes or in a covered skillet on the stovetop over medium heat, adding a splash of water to keep it moist.

Serve with salad: To keep things light, serve the chicken and salsa alongside (or on top) of a pile of crunchy greens dressed lightly with olive oil and lime juice.
